Eggs: It's what's for dinner

This is the question that haunts my dreams. Sometimes it is so hard for me to think of easy, satisfying meals to feed my family. I suspect I’m not the only one with this problem. Here are a few dinner ideas that are full of flavor and fairly quick. They will also help use up all of those hard boiled eggs you may have left over from Easter.



English Muffin Tops:  Cut English muffins in half, spread on some pesto, top with tomatoes, sliced hard boiled eggs, mozzarella cheese and preferred seasoning. Broil on high until bread is toasted and cheese is melted. So delish!




Chicken Breast on Bed of Spinach:  Season chicken breast and cook with a little bit of olive oil over medium heat. Spread spinach over a plate then cut up cooked chicken and place on top. Top with mango salsa and add sliced avocado and eggs to the side.  Drizzle with homemade sesame dressing (recipe below). My favorite dish!


Sesame Dressing:  Add 1/3 C sugar, ¼ C apple cider vinegar, 1 tsp onion flakes, ¼ tsp paprika, ½ tsp Worcestershire sauce, ¼ C oil and 1 tsp lemon juice to a blender for 30-60 seconds. Stir in toasted sesame seeds and serve.
